However, one interviewer turned the interview into a VC pitch instead of an interview: here's $25 million; give me a new business plan.

Depends on what you say you know. If you list it on your resume they WILL drill down. You can fake it till you make it here. Just be prepared to know what your talking about if you list it on your resume. Also if you listed a certification it better be current, they will check it before you interview.
