Subway has a range for every level or pay grade. They usually target below the midpoint and go a bit higher to meet the target midpoint on salaries. However, they are not the highest or 75th percentile unless you are a rockstar, killing at every level with your answers. That's really rare, even if you are a rockstar. They have a bonus structure based on the pay grade levels, and these levels sit in one bucket of bonus %age. They will only change if your pay grade level changes. I negotiated and got a signing bonus paid after 30 days of my employment.
